Blackened Steak with
Cabernet Blue Cheese Sauce
Serves 2
ingredients
2 Blue Ribbon® steaks (such as filet mignon)
2 Tablespoons olive oil, separated
Instant Gourmet Awake A Steak seasoning, to taste
2 Tablespoons crumbled blue cheese
¼ Cup cabernet sauvignon wine (or your favorite dry red wine)
Sprig if fresh thyme (optional)

Heat you skillet over med-high heat for one minute. Rub 1 tablespoon of the olive oil over both sides of the steaks. Season to taste with the Instant Gourmet Awake A Steak seasoning.
Add one tablespoon olive to the hot skillet and swirl to coat. Add the seasoned steaks and bronze for 1-2 minutes per side. LOWER the heat to medium and continue to cook until just done. Add the blue cheese, wine and thyme sprig to the hot pan and swirl the steaks to coat evenly. Remove the steaks and let rest for 10-15 minutes (lightly covered with foil). After steaks have rested remove the thyme sprig from the sauce and reheat over med-high heat until hot. Spoon sauce over steaks and serve.
